Work Week Menu Plan: Cinco De Mayo Plan

Since Cinco de Mayo occurs this week, you will see a lot of Mexican food on sale this week. My menu will reflect the great deals I got on taco shells and seasoning!

Monday- Italian Sausage Zucchini Bake (Make with Chicken Sausage I got for free after coupon).

Tuesday- Artichoke, Tomato & Olive Pasta (We had artichokes on Sunday and my boys did not finish theres. I will harvest the hearts and make a pasta with chopped tomatoes, olives and pesto.)

Wednesday- Chicken Fajitas

Thursday– Breakfast for dinner (an abundance of eggs again!)

Friday– Slow Cooked Carnitas & Homemade Corn Chips

  1. How about Huevos Rancheros with all your eggs this week!? It’s not easy, and takes coordination, but its different.

    I use Corn Tortillas (which I just got a $0.55 coupon for from Smith’s). Crisp up the tortilla in oil. Then layer refried beans in the bottom of the tortilla ‘cup’ then put an egg on top. I prefer to poach the eggs, but an overeasy is fine. Then throw tomatos or just salsa over top.

    Another idea for eggs is Loco Moco (Moco Loco maybe?) from Hawaii.
    Pile cooked rice on plate, then a cooked hamburger, then an over easy egg and then brown/beef gravy. HUMMMMMO

      Great ideas! I will have to keep them in mind. Thursday is my son’s baseball practice night. I get home from work at 5:30 and then have to take him at 6. Hubby usually makes dinner that night so it has to be really easy! He is still a beginner cook- like very basic. But he gets the kids fed! Thanks, as always, for you comments! I love them!
