Artichoke

Artichokes are on sale this week at Kroger for $1 each. It had been several years since I had eaten a fresh artichoke. I thought the kids would enjoy it too since they are somewhat adventurous eaters for their age.

Cut Top Off

First, cut the stem off of the artichoke. Then you want to cut about a 1/2″ to 1″ off the top of the artichoke- you can’t eat that part anyways!

Cut Sharp Tips

Next, cut the sharp tips off of each leaf. I used kitchen shears which made it very easy.

Prepared Artichoke

Boil water in a large pot. Add artichokes and return to boil. Place lid on top and simmer for 20-30 minutes. The leaves should pull off easily when it is done. Remove from pot and place upside down on towel to drain water.

I made Basil Aioli for my artichoke and the boys had melted butter. Capt. M really liked the artichoke! Mr. B tried it but didn’t care for it. I saved the artichoke hearts from both of the boys artichokes and I am making a pasta dish with them.
