Work Week Menu Plan: The Ambitious Addition

I almost forgot about the menu plan for the week! It’s late on Sunday night as I sit here trying to figure out what the plan is. As I plan the menu, I realize I am being pretty ambitious this week. I am planning on making a couple of new dishes all during the work week. We shall see how this plays out!

Monday- Grilled Eggplant Salad & Chicken (I use feta cheese instead of goat cheese.)

Tuesday- Baked Polenta With Red Sauce (I have never made polenta but I bought some this weekend to try!)

Wednesday- Shrimp Alfredo (Use Lower Fat Alfredo Sauce)

Thursday– Tacos with Pork (Pork roast precooked and shredded in freezer)

FridayChicken With Couscous (Another new thing for me- I have never made couscous!)
