Work Week Menu Plan: Back on Track

I didn’t have a menu plan last week and I was completely lost! Saturday night I was unable to sleep because I started thinking about the menu plan for this week! I did a little preparation on Sunday to make this weeks meals a breeze.

Monday- Pork Lo Mein (Use leftover pork loin from Staurday)

Tuesday- Polenta Taco Bake (Made polenta over the weekend.)

Wednesday- BBQ Beef Sandwiches and Green Salad (Leftover sirloin tip roast from Sunday.)

Thursday–  Egg Lit’l Smokies & Biscuit Bake

Friday– Chicken Pot Pie
