apple butter bread

Life is sweet and so is the unexpected largesse from friends. I was recently given a jar of apple butter from a friend among the many other things she shares with us to avoid waste when her family can’t quite finish items before they would otherwise need to be thrown away and in return I shared with her the fruits of her gift in the form of this moist and delicious bread. Think twice before throwing items away, you could find an alternative way to use them yourself or find someone else who can.

Some of the apple butter is reserved to be applied in the middle of the batter. This gives the bread a nice layer of apple butter in the middle!

Recipe type: Bread
Ingredients
  • 2 cups flour
  • 1 cup brown sugar
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 ½ cups apple butter, divided
  • ½ cup apple juice, no sugar added
  • ¼ cup butter, melted
  • 1 egg, beaten
  • ½ cup raisins (optional)
  • ⅓ cup walnuts, chopped
Instructions
  1. Preheat oven to 350 degrees F.
  2. Prep a 4x8 loaf pan with Baker’s Joy or cooking spray.
  3. In a large bowl combine flour, brown sugar, baking powder, baking soda and salt.
  4. In separate smaller bowl whisk together ¾ cup apple butter, apple juice, melted butter and egg.
  5. Add wet ingredients to dry and blend until completely incorporated together.
  6. Fold in raisins and walnuts.
  7. Transfer half the batter to the loaf pan, and then spread remaining ¾ apple butter gently over the batter and top with remaining batter.
  8. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. (Note: this bread browns fast due to the rich color of the apple butter—it’s not burning; bake completely before removing from oven.)
  9. Remove from oven and cool completely before cutting.
  10. Serve & enjoy!

  1. Hello! You were after me at the Tatertots and Jello link party, so I was told to visit you. Boy am I glad I did!

I am all about finding a way to upcycle or in this case salvage items, even in the kitchen. I found a way to buy from Costco when I lived by myself, always with a Plan B or C for produce when it was about to go bad.

I’m so glad I got to visit you and this recipe, and I hope I can return the favor when you visit my blog!
