Asparagus Crab Soup Recipe

If you have leftover asparagus, give this simple cream soup a try. The crab makes it a rich soup. Even though my husband does not like asparagus, he enjoyed this soup!

Asparagus Crab Soup

1 Bunch Asparagus
5 cups Chicken Broth
1 small onion, chopped
6 oz. Lump Crab Meat
1/2 cup Cream
Dash of Nutmeg
Dash of Old Bay Seasoning

Wash asparagus and cut 1/2″ of the woody end off. Chop up the rest of the asparagus. Bring the chicken broth to a boil and add asparagus and chopped onion. Cook for about 30 minutes or until asparagus is very tender.

When the asparagus is cooked through, blend the broth mixture. I used an immersion blender. Add in the crab, cream and seasoning. Cook for a couple of minutes until heated through.
