Baja Fish Taco Recipe + McCormick Taco Night Challenge

I love, love, love Mexican food. Good Mexican food is one of the things that I miss dearly now that I live in Virginia instead of my home state of California. I do make my own Mexican food, usually enchiladas or tacos on a weekly basis. Recently we have been making fish tacos!

McCormick Seasoning

In the following Baja Fish Taco recipe I used McCormick chili powder, garlic powder and salt. The McCormick Chili Powder gives the recipe a little zip of spice without being too spicy. I simply mixed the seasonings with cornmeal for a light crust for the fish.

The sweetness of the coleslaw combined with the spices makes for a wonderful flavor. Plus, this meal is rather quick to make!

Baja Fish Taco Recipe

Ingredients
  • 2 Cups Prepared Coleslaw
  • ¼ Cup Cilantro, Chopped
  • ¼ Cup Cornmeal
  • 4 teaspoons McCormick Chili Powder
  • ¾ teaspoon McCormick Sea Salt
  • ½ teaspoon McCormick Garlic Powder
  • 1 lb. Tilapia or other white fish
  • 8 Corn Tortillas
  • 1 Avocado
Instructions
  1. Heat oven to 375 degrees.
  2. In a bowl mix the coleslaw and the cilantro. Set aside.
  3. In a bowl mix cornmeal, chili powder, salt and garlic powder.
  4. Dry fish fillets with a paper towel and then dredge in the spice mixture.
  5. Place fillets on a baking sheet prepared with non-stick cooking spray.
  6. Bake for 10 minutes.
  7. When fish is cooked, place a fillet on a tortilla. Add a slice of avocado and a scoop of coleslaw.
  8. Serve and enjoy!
