Balsamic Chicken and Mushrooms Recipe

Chicken can be pretty boring after awhile. This recipe is full of flavor though! If you like balsamic vinegar you will love this recipe!

Balsamic Chicken & Mushrooms

3 skinless, boneless chicken breasts
Dash salt and pepper
2 tablespoons olive oil
8 oz. white mushrooms, sliced
2 cloves garlic
1/4 cup balsamic vinegar
3/4 cup chicken broth
1 bay leaf

Season the chicken with salt and pepper. Heat olive oil and garlic in a skillet over medium high heat. Saute the chicken for 3 minutes or until it is nicely browned on one side.
Turn the chicken breasts and scatter the mushrooms over the top. Cook for about 3 minutes. Add the vinegar, broth and bay leaf. Cover tightly and simmer over medium low heat for 10 minutes, turning occasionally.

Transfer the chicken to a serving platter and cover with foil and set aside. Continue simmering the sauce, uncovered, over medium high heat for about 7 minutes or until reduced. Discard the bay leaf. Pour this mushroom sauce mixture over the chicken and serve.

Tips

  • Serve over whole wheat pasta or with mashed potatoes.
  • If the sauce is too thin after reducing, add a little bit of corn starch to thicken.
