Black Bean Soup Recipe

If you have 15 minutes you have time to make this wonderfully spicy, healthy and delicious soup! Great for lunch or dinner!

Black Bean Soup Recipe

Ingredients
  • (2) 15.25 oz cans of black beans, undrained (reduced sodium)
  • ½ cup thick & chunky salsa (whichever brand you prefer)
  • 1 tsp dried cilantro
  • ½-1 tbsp chili powder (more or less depending on your preference)
  • ½ tsp cumin
  • (1) 14.5 oz can 99% fat free chicken broth
  • Shredded cheese (topping, optional)
  • Sour cream (topping, optional)
  • Green onions, diced (topping optional)
Instructions
  1. In a blender or food processor, puree 1 can of undrained black beans.
  2. In a small-medium pot combine puree and remaining can of black beans, salsa, cilantro, chili powder, cumin and chicken broth, stir.
  3. Bring to a boil of medium-high heat, let boil for 5-7 minutes, stirring occasionally.
  4. Remove from heat, serve and top with cheese, sour cream and onions. Enjoy!
Notes
* For a vegetarian dish substitute chicken broth for vegetable broth. * Serve alongside a quesadilla, tortilla chips, cornbread muffins or some veggies and dip for a complete meal! * Add some chorizo or smoked sausage to make it a black bean stew.
