Black Beans & Tomatoes

Fast, easy and delicious—this side dish is loaded with protein and pairs great with seafood dishes, Mexican dishes and chicken—very versatile and at less than $2 dollars to make its budget friendly and will serve 4-6 individuals!

Ingredients
  • 15.25 oz. can black beans, rinsed & drained
  • 14.5 oz. can diced tomatoes, drained (I used one seasoned with basil, oregano & garlic)
  • ½ tsp. garlic, minced
  • ½ tsp. dried cilantro
  • Salt & pepper
Instructions
  1. Combine all ingredients in a small saucepan and heat over medium to low heat for 8-10 minutes or until heated through.
  2. Stir occasionally, but be careful not to mush the beans, they soften considerably as they cook.
Notes
* Experiment with alternative seasonings for versatility or add rice, corn, peppers or other additional ingredients as desired!
