Blackberry Chia Jam 2

You can never go wrong when fruit is the main ingredient in any recipe—this simple & delightful blackberry jam is semi-sweet and extremely versatile—spread on toast, crackers or muffins, stir into oatmeal, grits or yogurt or even just eat it by the spoonful!

I loved it in my grits, on my Greek yogurt, spread on toast and whole wheat crackers, I even spread a little on my pumpkin muffin and it was delicious!!! Plus chia seeds are addicting once you start eating them!

Ingredients
  • 3 cups fresh or frozen blackberries
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • ¼ cup chia seeds
Instructions
  1. In a small pot combine blackberries, sugar and lemon juice; cook over medium heat for 5 minutes.
  2. Reduce heat to medium-low, stir in chia seeds and cook, stirring occasionally, until thickened (approximately 15-20 minutes).
  3. Remove from heat, cool and store in airtight containers in the refrigerator.
  4. Serve & enjoy!
Notes
Substitute raspberries or strawberries for additional flavors or mix and match!
