Broccoli Chicken Casserole Recipe

Casseroles are great because they usually result in leftovers that my family can enjoy later in the week and as a bonus eliminates one night of cooking, but they are also fantastic because MOST are freezer friendly and you can make them ahead for convenience. This is a great money and time saver for busy families like ours and probably yours. This recipe tops my husband’s list of favorite casseroles, hope you enjoy it too!

Broccoli Chicken Casserole Recipe

Ingredients
  • 1- 1 ½ lbs boneless skinless chicken breast, cut into bite sized pieces
  • 6 oz box chicken flavored stuffing mix
  • 3 tbsp butter (substitute light or yogurt butter for less calories---this amount is already less than called for to make stuffing)
  • 1 ½ cups of water
  • (2) 10.75 oz cans condensed broccoli cheese soup
  • (1) 14 oz frozen bag of broccoli florets, unthawed (or like amount of fresh, steamed broccoli)
  • 1 cup shredded cheese (variety depends on your preference, I prefer a mixed cheese blend)
  • ⅛ cup Italian bread crumbs
  • Salt & pepper
  • Garlic & herb seasoning (or preferred blend of seasonings)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease a 9x13 inch baking pan or casserole dish with non-stick spray.
  3. Also coat a sauté pan with non-stick spray and begin by browning chicken over medium-high heat until cooked through. Season with salt, pepper and garlic and herb seasoning blend or preferred seasonings.
  4. While chicken is browning, follow cooking instructions on package for stuffing.
  5. Once chicken and stuffing are finished cooking begin assembling the casserole.
  6. Place broccoli in bottom of prepared pan and top with one can of broccoli soup.
  7. Then add chicken and second can of broccoli soup. Mix all ingredients so each is well coated.
  8. Top evenly with stuffing.
  9. Sprinkle on cheese and bread crumbs.
  10. Cover with aluminum foil and bake for 30-35 minutes.
  11. Serve & enjoy! Yields 6-8 servings (depending on portion size)
Notes
* Use a broccoli/cauliflower blend or mixed vegetable blend rather than just broccoli. * Add mushrooms! * Substitute bread crumbs for crushed crackers or garlic croutons. Anything that adds crunch will make a great topping!
