Butterscotch Banana Bars Recipe

I had bananas that were very ripe the other day. Instead of making traditional banana bread, I made these Butterscotch Banana Bars!

Butterscotch Banana Bars

3/4 Cup Butter, softened
2/3 Cup Sugar
2/3 Cup Brown Sugar, packed
2 teaspoons Baking Powder
1/2 teaspoon Salt
1 Egg
2 Ripe Medium Bananas, mashed
1 teaspoon Vanilla
2 Cups All-purpose Flour
1 Cup Butterscotch Chips

Preheat oven to 350 degrees.

In a bowl beat the butter for about 30 seconds with an electric mixer. Add sugar, brown sugar, baking powder and salt and mix until combined. Next add in the egg, vanilla and bananas until incorporated.  Beat in the flour with the mixer. The mixture will be thick. Add the butterscotch chips and gently fold in.

Grease a 15x10x1 cookie sheet. Spread the batter onto the cookie sheet and bake for 350 degrees for 25 minutes. When cool cut into bars.

Tips

  • Substitute chocolate chips if you don’t have butterscotch chips.
  • Add nuts if you like them.
