There are several ways to cook a spaghetti squash. I like to bake my spaghetti squash in the oven just like I bake a butternut squash. The seeds of a spaghetti squash can be roasted just like butternut squash seeds.
The first step is to cut the spaghetti squash in half and clean out the insides. Scoop out the seeds and the stringy pulp. Save the seeds if you intend to roast them.
Brush the squash flesh with olive oil and then place flesh side down on a baking sheet. Make sure the oven is preheated to 400 degrees. Bake for 35-45 minutes or until flesh is tender.
When the squash is tender, the flesh will form into “noodles”.
Drag a fork across the tender squash to make the noodle strands.
Serve with sauce for a carbohydrate free dinner!
