I am obsessed with spinach currently! I use spinach in smoothies, wraps, soups and salads. Some days I have a spinach and strawberry smoothie for breakfast and then a spinach salad for lunch – I just love it!
Litsa shared her spinach salad idea with me the other day and it looks fantastic! It’s crunchy and packed full of nutrition. The nuts and seeds add healthy protein while the berries add a little sweetness. For the flaxseed, Litsa used the Linwood Energy Blend.
- chia seeds
- pine nuts
- pumpkin seeds
- ground flax
- olive oil
- balsamic vinegar
- Grab hand full of spinach and place on a plate.
- Add sliced strawberries and celery.
- Tip with chia seeds, pine nuts, pumpkin seeds and ground flax.
- Season with black pepper and use olive oil and balsamic vinegar for the dressing.
