Dark Chocolate Black Bean Avocado Brownies Recipe

Black Bean Brownies

Its always a cycle with me…good eating…bad eating…good eating…crave chocolate = bad eating. So here we go again with a HEALTHY alternative to help you and me  stay on track and still fulfill cravings for things like FUDGY BROWNIES! Truly I really loved this brownie and it did satisfy my craving—hopefully it can satisfy yours!

To top off these brownies I used shredded coconut and sliced almonds. These are optional ingredients as the brownies themselves are delicious! If you are cautious about trying black bean brownies, try these avocado oat brownies first!

Dark Chocolate Black Bean Avocado Brownies Recipe

Ingredients
  • (2) 15 oz. cans black beans, rinsed and drained
  • 2 large eggs, lightly beaten (or substitute equivalent measurement for Egg Beaters Liquid Eggs)
  • 4 large egg whites (or substitute equivalent measurement for All-whites Liquid Egg Whites)
  • 1 ½ large avocados, mashed
  • 1 tbsp. coconut oil, melted
  • 1⅓ cup special dark unsweetened cocoa powder, sifted
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 tbsp. pure vanilla extract
  • 1 cup dark brown sugar (or corresponding measurement for Splenda Brown Sugar)
  • ⅔ cup dark chocolate chips + 2 tbsp. for sprinkling on top (or preferred variety)
  • 2 tbsp. unsweetened shredded coconut (optional topping)
  • 2 tbsp. slivered almonds (optional topping)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease a 9x13 cake pan or casserole dish and set aside.
  3. Combine all ingredients in the bowl of a stand mixer, using the paddle attachment mix all ingredients until well combined. Stop and scrape the sides of the bowl and bottom with a spatula as necessary.
  4. The batter should be thick but add a little water if the ingredients wont come together.
  5. Pour batter into pan and spread out evenly.
  6. Sprinkle with chocolate chips and optional desired toppings.
  7. Bake for 20-25 minutes or until a knife inserted into center comes out clean or nearly clean. They will become too dry if you over bake so watch carefully.
  8. Let cool for at least 30 minutes.
  9. Serve & enjoy! I stored left overs in the fridge and they were even better cold the next day with a cup of coffee!
