Overnight French Toast Recipe

Ingredients
  • ½ cup Splenda Brown Sugar
  • 5 tbsp lite butter, melted
  • 1 ¼ cups All-Whites
  • 1 cup of skim milk
  • #8 1 inch thick slices of bread (any variety, but brioche or challah work fantastic)
  • 1 tbsp vanilla extract
  • 1 ½ tsp cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ⅛ tsp salt
  • ¼ cup chopped nuts (any variety, peanuts, pecan, walnuts etc.)
Instructions
  1. In a small microwave safe bowl, melt butter and combine with brown sugar. Pour half the mixture on the bottom of a 9x13 inch casserole dish or baking pan.
  2. In a medium-large bowl combine all whites, milk, vanilla, cinnamon, ginger, nutmeg and salt. Mix well.
  3. Dip bread slices into the milk/egg mixture and layer in the casserole dish. Overlap if necessary.
  4. Pour any remaining milk/egg mixture over bread in dish.
  5. Spoon remaining brown sugar/butter mixture over slices of bread.
  6. Sprinkle nuts evenly over bread slices.
  7. Wrap tightly with aluminum foil or plastic wrap and store in the refrigerator overnight.
  8. In the morning, remove dish from fridge, uncover and allow to sit while oven preheats to 350 degrees F.
  9. Bake uncovered for 30-35 minutes. Check to make sure the bottom of each is cooked before removing from oven. Oven temps vary and therefore so does cook-time.
  10. Serve drizzled with maple syrup or sprinkled with powdered sugar. Enjoy!
Notes
* Serve alongside scrambled eggs, bacon or sausage for additional protein. * Top with fresh cut strawberries or blueberries for one of your daily servings of fruit.
