Berries & Cream Pie Recipe

Ingredients
  • 1 single pie crust (homemade or store bought)
  • 3 cups fresh or frozen berries (any variety)
  • 1 cup no calorie granulated sugar substitute (or sugar if you prefer)
  • ⅓ cup all-purpose flour
  • 2 eggs
  • ½ cup Greek nonfat plain yogurt (or sour cream if you prefer)
  • 1 tsp pure vanilla extract
  • 2 ½ tbsp light brown sugar
  • 2 tbsp no calorie granulated sugar substitute (or sugar if you prefer)
  • ½ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ½ cup + 2 tbsp all-purpose flour
  • 4 tbsp light butter, melted
Instructions
  1. Preheat oven to 350 degrees F.
  2. Place pie crust on the bottom of a pie pan, fold over edges and crimp.
  3. Place berries on top of pie crust.
  4. In a medium bowl or KitchenAid mixer combine sugar substitute, flour, eggs, yogurt and vanilla. Blend until smooth and creamy then pour evenly over berries.
  5. In a small bowl mix together the brown sugar, sugar substitute, cinnamon, nutmeg and flour, then add melted butter and work until the ingredients come together.
  6. Sprinkle this crumbly topping over the top of the pie.
  7. Bake for 50-60 minutes or until the crust is golden brown and filling is set.
  8. Cool completely.
  9. Serve & enjoy! Yields 8 slices of pie!
