Mexican Beef & Rice Nachos Supreme Recipe

Ingredients
  • (1) 6.4 oz box Mexican Style Rice-a-Roni
  • 2 Tbsp light butter
  • 2 ¼ cups water
  • 1 lb 93/7 lean ground beef
  • ¼ tsp Seasoning salt
  • ⅛ tsp Pepper
  • ⅛ tsp cayenne pepper
  • 2 medium tomatoes, diced
  • 1⅓ cup reduced fat taco blend shredded cheese (more or less depending on desired cheesiness)
  • 2.25 oz can of black olives, sliced
  • Baked Tostitos (or preferred tortilla chip)
  • Toppings: optional (hot sauce, taco sauce, sour cream, jalapeños, lettuce, onions, salsa etc.)
Instructions
  1. In a medium-large sauté pan with lid season ground beef with seasoning salt, pepper and cayenne pepper and brown until no longer pink, drain and return to pan.
  2. To ground beef add rice mix, seasoning packet, butter and water. Bring to a boil then reduce heat and simmer for 15-20 minutes or until liquid has been absorbed.
  3. Once beef and rice have finished cooking begin assembling your nachos. Prepare either individual servings on plates or combine on one large platter.
  4. Start with a layer of baked tostitos and then add a layer of beef & rice followed by diced tomatoes & black olives before topping it all with cheese.
  5. Broil on high in oven for 2-3 minutes until cheese is completely melted.
  6. Remove from oven and top with desired toppings.
  7. Serve & enjoy!
