Baked Apple & Raisin Oatmeal Recipe

Ingredients
  • 2 cups apple, unpeeled & chopped into bite sized chunks
  • 2⅔ cups old-fashioned rolled oats
  • ½ cup raisins
  • 2 tsp ground cinnamon
  • ¼ salt
  • 4 cups vanilla soymilk
  • ¼ cup maple syrup
  • ¼- ½ cup walnuts (optional)
  • Additional soymilk (optional)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Lightly spray a 2 quart baking dish or bowl with cooking spray.
  3. In the dish or bowl combine apples, oats, raisins, cinnamon, salt, soymilk and syrup. Mix well.
  4. Bake uncovered for 45-50 minutes or until nearly all of the liquid is absorbed.
  5. Remove from oven and add walnuts to the entire dish or to each individual serving depending on preference.
  6. Top with additional soymilk if desired.
  7. Serve & Enjoy!
Notes
* Substitute pears for apple for a flavor variation. * Substitute vanilla soymilk for plain soymilk or milk if preferred, but beware that an additional sweetener (brown sugar, agave nectar, syrup or granulated sugar) maybe be required to add sweetness to the dish depending on flavor preference. * Substitute dried blueberries or cranberries for raisins or in addition to raisins for flavor alternatives. * Top with crumbled granola rather than walnuts or toss in some candied pecans or sliced almonds.
