Broccoli Cheese Soup Recipe

Ingredients
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ¼ cup butter
  • ¼ cup flour
  • 3 cups vegetable broth
  • 2 heads broccoli, florets chopped
  • pinch nutmeg
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup milk
  • 1 cup half and half
  • 2 oz. brie
  • 1 cup shredded cheddar cheese
Instructions
  1. In a large pot melt butter. Add onions and garlic and saute until tender.
  2. Wisk in flour to make a roux.
  3. Add vegetable broth and wisk until smooth.
  4. Add broccoli, nutmeg, salt and pepper to broth mix and cook for 10 minutes.
  5. When broccoli is tender, add milk and half and half. Heat until it just starts to boil.
  6. Remove from heat and use an immersion blender to blend the broccoli florets. I blended about half of mine and left some florets whole.
  7. Add brie and cheddar and stir until melted.
Notes
* If you don't like the strong taste of brie cheese, it can easily be omitted.
