Creamy Turkey Noodle Soup Recipe

Ingredients
  • ¼ Cup Butter
  • ¼ Cup Flour
  • 5 Cups Chicken Broth
  • 1 Cup Drippings from Turkey Pan
  • 1½ Cups Cooked Vegetables (I used carrots, onions and celery that were cooked with the turkey. Finely chop vegetables.)
  • ½ teaspoon Black Pepper
  • 2 Cups Chopped Cooked Turkey
  • 6 oz. Noodles
  • 2 Cups Half & Half
Instructions
  1. In a large stockpot melt butter over medium heat. Wisk in flour to make a roux.
  2. Slowly stir in the chicken broth and drippings from the turkey pan.
  3. Add the cooked finely chopped vegetables and bring to a boil.
  4. Add the turkey, pepper and noodles and cook for 10 minutes.
  5. Add the half & half and heat for about 2 minutes.
Notes
* If you don't have cooked vegetables, you can finely chop carrots, celery and onions and saute before making the roux. * If you don't have drippings from the turkey pan, ad another cup of broth. * Since I used vegetables and the turkey drippings, I didn't need to add a lot of spices. The vegetables already had rosemary, parsley and sage on them. If you start from fresh veggies, add seasonings of your choice!
