Roasted Brussels Sprouts with Lemon Recipe

Ingredients
  • 1 ½-2 lbs Brussels sprouts
  • 2 cloves of garlic, smashed
  • 1 ½ tbsp olive oil
  • Salt & pepper
  • 4 tbsp unsalted butter
  • 1 ½ - 2 slices of bread, toasted & crumbled
  • Juice from 1 lemon
Instructions
  1. Preheat oven to 425 degrees F.
  2. In a large bowl toss Brussels sprouts, garlic, ½ tsp salt, ¼ tsp of pepper and olive oil together until Brussels sprouts are well coated.
  3. Transfer to a rimmed baking sheet and spread out into a flat layer. Roast for 15-20 minutes or until tender, stop to turn once or twice during cooking for even roasting.
  4. Once cooked transfer to a large bowl, add butter, bread crumbs and lemon juice, mix well.
  5. Serve & enjoy!
