(2) 7.5 oz cans of boneless skinless Red Sockeye Salmon
¾ cup panko bread crumbs
1 egg, beaten
¼ tsp fresh ground peppercorn
¼ tsp Cajun seasoning
1 tbsp Lawry’s Tuscan Sundried Tomato Marinade
¼ cup milk
Instructions
Preheat oven to 350 degrees F.
Lightly spray a baking pan with cooking spray or lightly coat with vegetable oil.
In a large bowl break flake apart the salmon with a fork then add bread crumbs, pepper, Cajun seasoning, marinade, milk and the egg. Using your hands mash & mix all ingredients together.
Using a large spoon or an ice cream scoop (I found this a great way to keep patties uniform in size) form mixture into ½ inch thick patties and place on the baking pan.
Bake for 15 minutes, flipping them over at about 7 or 8 minutes into the bake time. They are finished cooking when they have a nice golden brown color on each side.
