Caprese Crostinis Recipe

  • 6 slices of French or Italian bread
  • 2 Roma tomatoes
  • Coarse salt & pepper
  • 4 oz fresh mozzarella, cubed
  • 2 tbsp fresh basil, minced
  • 3 tbsp olive oil
  • 1 tsp minced garlic
Instructions
  1. Dice Roma tomatoes and transfer to a colander or mesh sieve, sprinkle with salt, toss and set over a bowl to drain for 30 minutes, stirring occasionally. The salt will help extract some of the extra water and juices from the tomatoes so your finished product won’t get mushy.
  2. Toss the mozzarella and basil together and set aside.
  3. In a small pan over medium heat add oil and garlic, cook stirring frequently until the garlic lightly browns and begins to give off a strong garlic aroma. (You are basically infusing the oil with the garlic---if you have oil infused with garlic already then skip this step).
  4. Brush each slice of bread on one side with the garlic oil and layer on a baking sheet.
  5. Broil on high for 3-5 minutes or until the bread is golden brown and crisp.
  6. Add tomatoes to the mozzarella and basil, season with salt and pepper, mix and then top each slice of bread.
  7. Serve & Enjoy!
Notes
* Add additional herbs or seasonings as desired. * Cubes of avocado would also be a great addition to this recipe. * Substitute feta cheese for mozzarella for variety or personal preference!
