Ingredients
  • 2 apples, peeled and finely diced
  • 2 tsp. cinnamon
  • 2 tbsp. butter
  • 1 tbsp. brown sugar
  • 2 eggs
  • 1 cup milk
  • 3 tbsp. butter, melted
  • 1 ½ cups self-rising flour

Instructions
  1. Melt 2 tbsp. butter in a small sauté pan over medium-high heat, once melted add apples, cinnamon and brown sugar; cook until apples are soft and butter and sugar have reduced to a sticky sauce coating the apples.

  3. Stir in flour and sugar and mix until batter is smooth and free of lumps.
  4. Fold in apple/brown sugar mixture.
  5. Heat griddle or large skillet to approximately 375 degrees F.
  6. Lightly grease, pour ¼ batter onto griddle for each pancake and cook 1-2 minutes (bubbles will form along edges when they are ready to be flipped), flip and cook additional 1-2 minutes until golden brown.
  7. Remove and keep warm while you make additional pancakes until batter is depleted.
  8. Top with maple syrup or powdered sugar.
  9. Serve & Enjoy! Yields 8-10 pancakes.
Notes
As a syrup alternative top with warm melted caramel for a caramel apple pancake.
