Peanut Butter & Jelly Bars Recipe

- 1 stick unsalted butter, softened
- ¾ cup sugar (or corresponding measurement for sugar substitute)
- 1 egg
- ½ tsp pure vanilla extract
- 1 cup creamy peanut butter (use reduced fat to cut calories)
- 1 ½ cups all-purpose flour
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ cups jelly (I used strawberry, but choose your favorite variety of preserves---sugar free to cut calories)
- ⅔ cup salted peanuts
- ⅔ cup peanut butter chips
- Preheat oven to 350 degrees F.
- Prep a 9x13 inch baking pan with cooking spray or Bakers Joy.
- In a large bowl cream together butter and sugar until fluffy using an electric mixer. Add egg, peanut butter and vanilla and beat until well combined.
- In a separate bowl, sift together flour, baking powder and salt.
- Slowly add flour mixture to wet ingredients and mix until all ingredients are combined.
- Reserve ½ cup of dough; using your fingers gently press the remainder of the dough evenly into the bottom of the pan.
- Spread preserves over dough, crumble the reserved dough over the top and sprinkle with peanuts & peanut butter chips.
- Bake 40-45 minutes or until golden and bubbly. Cool completely.
- Cut into bars.
- Serve & enjoy!
