Prep 18 muffin cups with Bakers Joy or lightly grease with cooking spray.
In a large bowl sift together flour, sugar, cinnamon, baking powder& salt. Stir in raisins.
In a separate bowl whisk together eggs, melted butter and milk.
Gradually add dry ingredients to wet and mix until well combined. Batter will be thick, but if it appears too thick and is hard to spoon add ¼ reserved milk to loosen a little.
Spoon into muffin cups until ¾ of the way full.
Sprinkle generously with cinnamon sugar on top.
Bake for 15 minutes or until a toothpick inserted in center comes out clean.
Serve & enjoy. Yield 18 muffins.
