Pretzel Buns Recipe

Ingredients
  • 1 cup whole milk
  • 2 tbsp. butter
  • 2 tbsp. brown sugar
  • 2 ¼ tsp. Rapid Rise Yeast (MUST BE RAPID RISE)
  • 2 tsp. salt
  • 3 cups all purpose or bread flour, plus additional in reserve
  • 3 quarts water
  • ¾ cup baking soda
  • 1 egg
  • 1 tsp. water
Instructions
  1. In a small saucepan heat milk and butter until warm (100-110 degree F). The butter should not melt completely or you’ll know it’s too hot.
  2. Once warmed, combine with yeast and brown sugar in the bowl of a stand mixer.
  3. Stir in salt & add 2 cups of flour and mix on speed 2 using the bread hook for 2-3 minutes. Gradually add the remaining flour and continue to knead on speed 2 (approximately 3-5 minutes) until the dough is combined and begins to clean the edges of the bowl. It should be soft, smooth and elastic to the touch. You should be able to pull on it but not have a chunk pull off the main ball of dough.
  4. Form into a ball and place in a greased bowl, cover and let rise in a warm place free from draft for one hour or until doubles in bulk.
  5. After an hour punch down dough and divide into 8 equal sections.
  6. To form the bun, first shape each section into a ball then pull the dough taught starting at the top of the ball and tucking under the sides and pinching the dough closed on the bottom so it forms a tight ball. Place each on a large baking sheet as you work through each one.
  7. Once formed cover with a damp cloth and set in a warm area free from draft to rise for another hour or until doubled in bulk.
  8. At the end of the hour preheat oven to 400 degrees F.
  9. In a large pot combine water and baking soda and bring to a rapid boil.
  10. Working with 2 to 3 at a time, place balls in the boiling soda bath and boil for 1 minute, flip using a slotted spoon and boil on opposite side for an additional minute.
  11. Remove carefully with a slotted spoon; allow excess water to drip off before placing them on a greased baking sheet about 3 inches apart. Continue until all balls are boiled and ready to bake.
  12. Brush with egg wash and cut a small cross on the top.
  13. Bake for 15 minutes.
  14. Reduce oven temperature to 350 degrees F and bake an additional 10-20 minutes or until the loaves are a deep uniform brown.
  15. Remove and cool on wire racks.
  16. Use as desired. Enjoy
