Pumpkin Cornbread Recipe

Ingredients
  • 1 cup all purpose flour
  • 1 tbsp. baking powder
  • 1 tsp. Kosher salt
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • ½ cup brown sugar
  • 1 cup yellow cornmeal
  • 2 eggs
  • 1 cup pure pumpkin puree
  • ¼ cup vegetable oil
  • ¼ cup milk
  • 1 tbsp. honey
Instructions
  1. Preheat oven to 400 degrees F.
  2. Grease an 8x8 baking dish with cooking spray.
  3. In a medium bowl sift together flour, baking powder, salt, cinnamon, nutmeg, brown sugar and cornmeal.
  4. In a small bowl beat the eggs, and then stir in the pumpkin puree, oil, milk and honey.
  5. Add the wet ingredients to the dry and mix until just combined.
  6. Transfer batter to baking dish and smooth out the top with a rubber spatula.
  7. Bake for 25-30 minutes or until a knife inserted in the center comes out clean.
  8. Serve & enjoy!
