Lemon Poppy Seed Bread Recipe

- 2 cups all purpose flour
- 2 tsp. baking powder
- ½ tsp. salt
- 1 cup of sugar (or corresponding measurement for sugar substitute)
- 2 eggs
- 1 cup buttermilk, chilled
- ½ cup unsalted butter, melted & cooled
- 1 ½ tsp. pure lemon extract
- 2-3 tsp. grated lemon zest (approximately 1 lemon)
- 2 tbsp. poppy seeds
- Preheat oven to 350 degrees F.
- Prep a 9x5 bread pan with cooking spray or Baker’s Joy.
- In a small bowl whisk together flour, baking powder & salt.
- In a large bowl combine sugar, eggs, buttermilk, melted butter, lemon extract, lemon zest and poppy seeds, mix well.
- Add dry ingredients to wet and stir just until blended. Do not over stir.
- Transfer batter to bread pan and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Remove from pan to a wire rack to cool before cutting.
- Serve & enjoy!
