Lemon Poppy Seed Bread Recipe

Ingredients
  • 2 cups all purpose flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 cup of sugar (or corresponding measurement for sugar substitute)
  • 2 eggs
  • 1 cup buttermilk, chilled
  • ½ cup unsalted butter, melted & cooled
  • 1 ½ tsp. pure lemon extract
  • 2-3 tsp. grated lemon zest (approximately 1 lemon)
  • 2 tbsp. poppy seeds
Instructions
  1. Preheat oven to 350 degrees F.
  2. Prep a 9x5 bread pan with cooking spray or Baker’s Joy.
  3. In a small bowl whisk together flour, baking powder & salt.
  4. In a large bowl combine sugar, eggs, buttermilk, melted butter, lemon extract, lemon zest and poppy seeds, mix well.
  5. Add dry ingredients to wet and stir just until blended. Do not over stir.
  6. Transfer batter to bread pan and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from pan to a wire rack to cool before cutting.
  8. Serve & enjoy!
