⅓ cup peanut butter (creamy or crunchy and/or any nut butter of your choice)
⅔ cup cinnamon applesauce (or preferred variety)
1 tbsp wheat bran flakes
1 tbsp ground flax
1 tsp pure vanilla extract
½ tsp cinnamon
¼ tsp nutmeg
Pinch or two of cayenne pepper
1 cup quick cook oats
1 cup old fashioned rolled oats
¼ cup chopped nuts (any variety you prefer)
¼ cup semi-sweet chocolate chips
Instructions
Preheat oven to 350 degrees F.
Lightly grease a large cookie sheet or line with parchment paper.
In a large bowl mix the mashed bananas and peanut butter until well combined.
Add applesauce, wheat bran, flax, vanilla extract, cinnamon, nutmeg and cayenne pepper; stir to combine.
Fold in the oats, chopped nuts and chocolate chips.
Drop the cookie mixture by the spoonful onto the cookie sheet and shape & flatten into circular discs.
Bake cookies for 20-25 minutes. Cool slightly on cookie sheet before transferring to a cooling rack. Cool completely and store remainders in an airtight container in the refrigerator.
Serve & enjoy! Yields 1 ½ -2 dozen cookies depending on size.
Notes
Experiment with almond butters, cashew butters or different varieties of peanut butters and/or different flavored extracts and different varieties of nuts or include dried cranberries or blueberries as a substitute for the chocolate chips! Enjoy with coffee, tea or a cold glass of milk!
