In a bowl large enough to dip fish fillets, beat eggs and milk together until well combined.
In a second bowl large enough to dip and roll fish fillets, add panko bread crumbs and season with garlic powder, salt and pepper; stir to distribute throughout the mixture.
Heat a skillet pan with olive oil to a fairly high heat in order to fry your fish fillets.
Dip fillets in egg & milk mixture then roll in seasoned bread crumbs.
Gently place each fillet as they are breaded in the heated oil and cook on each side for 4-5 minutes or until golden brown. Fish should flake easily with fork when finished cooking. Do not overcook.
Meanwhile toast hoagie buns with a broiler or toaster oven.
To assemble each sandwich spread the bottom half of each hoagie bun with ¼ cup prepared coleslaw, then position one fried fish fillet on top the coleslaw before spreading ¼ cup baked beans over the top of the fish fillet, position top of hoagie upon beans and gently press to hold sandwich together.
Serve & enjoy! Yields 4 sandwiches!
