Herb Roasted Leg of Lamb Recipe

Ingredients
  • 5-6 Pound Leg of Lamb
  • 4 Cloves Garlic
  • 2 Tablespoons Olive Oil
  • ¼ Cup Yellow Onion
  • 2 Tablespoons Fresh Rosemary
  • ¼ Cup Fresh Parsley
  • Salt
  • Pepper
Instructions
  1. Preheat oven to 450 degrees.
  2. In a blender combine garlic, olive oil, onion, rosemary and parsley. Pulse until it forms a chunky paste.
  3. Score the fat on the lamb with a sharp knife.
  4. Spread herb paste all over lamb. Sprinkle with salt and pepper to your liking.
  5. Place lamb fat side up in roasting pan. Place in oven at 450 degrees for 20 minutes.
  6. Turn heat down to 325 degrees and cook for an additional 60 minutes. Use a meat thermometer to check meat. Pull out lamb when it reaches 135 degrees. Place foil over lamb and let set for 20 minutes.
  7. Carve and serve!
Notes
* Cooking time will vary depending on how thick your roast is. Mine was very thick (versus a long and skinny roast). 135 degrees would be for a medium rare roast.
* Remember that the temperature will rise a but when you let the lamb rest with foil covering it.
