¾ cup sugar (or corresponding measurement for sugar substitute)
¼ cup all purpose flour
¼ tsp salt
3 cups of 2% milk
3 large eggs
1 ½ tsp pure vanilla extract
8-10 oz vanilla wafers (about 60 wafers)
4 large, ripe bananas, cut into ¼ inch thick slices
Instructions
In a large saucepan, mix sugar, flour and salt then slowly whisk in milk.
Cook & stir over medium heat until thick & bubbly---reduce heat to low and simmer for 2 more minutes then remove from heat.
In a small bowl whisk eggs then add a ¼ cup of hot mixture and whisk together, add back to pan and heat over medium high heat until it begins to gently boil---cook for 2 minutes then remove from heat.
Stir in vanilla & set aside to cool (stir occasionally to speed up the cooling process).
Meanwhile line the bottom of an ungreased 8x8 in baking dish with vanilla wafers, top wafers with a layer of banana slices followed by half the pudding (once cooled); repeat.
Seal with plastic wrap and refrigerate for at least 4 hours (overnight is better).
Before serving crush remaining vanilla wafers and sprinkle generously over the top.
