Pineapple Coconut Banana Bread Recipe

Ingredients
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup sugar (or corresponding measurement for sugar substitute)
  • 2 eggs
  • ½ cup mashed ripe banana
  • ⅓ cup crushed pineapple, drained or chopped fresh pineapple
  • ½ cup sweetened or unsweetened flaked coconut
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
Instructions
  1. Preheat oven to 350 degrees F.
  2. Prep a 9x5 bread loaf pan with cooking spray or Baker’s Joy.
  3. In a large bowl cream together butter and sugar, add egg and beat until creamy.
  4. Stir in banana, pineapple and coconut flakes.
  5. In a large bowl whisk together flour, baking powder, baking soda and salt.
  6. Add dry ingredients to wet and stir until just combined.
  7. Transfer to loaf pan.
  8. Bake for 65-70 minutes or until toothpick inserted into the center comes out clean.
  9. Cool in pan for 10 minutes before removing to wire rack to cool completely.
  10. Serve & enjoy!
