Coconut Granola Balls Recipe
- 2 cups old fashioned rolled oats
- 2 cups shredded coconut (sweetened or unsweetened)
- 1 cup natural peanut butter (creamy or crunchy)
- 1 cup ground golden flax
- 1 cup chocolate chips (or substitute with any preferred variety of chips or even cacao nibs)
- ⅔ cup honey
- 2 tsp. pure vanilla extract
- 1 tsp. cinnamon
- Using a stand mixer with the flat beater or spatula attachment or a bowl, wooden spoon and some elbow grease mix all ingredients thoroughly!
- Using a tablespoon scoop out and roll into bite-sized balls. Place individual balls on a cookie sheet or in the cups of a mini muffin pan.
- Chill until hard. Store leftovers in an airtight container in the refrigerator. Yields 3 dozen granola balls.
