Vanilla Chia Seed Muffins

Ingredients
  • 1 stick butter (1/2 cup), softened
  • 3⁄4 cup sugar
  • 2 eggs, lightly beaten
  • 3⁄4 cup vanilla Greek yogurt
  • 1 tsp. pure vanilla extract
  • 3⁄4 cup whole wheat flour
  • 1 1⁄4 cup all purpose flour
  • ⅓ cup chia seeds
  • 1⁄2 tsp. salt
  • 1⁄4 tsp. baking soda
Instructions
  1. Preheat oven to 375 degrees F.
  2. Grease a 12-cup muffin pan with cooking spray, Baker’s Joy or line with cupcake liners.
  3. In a large bowl cream together butter and sugar until light and fluffy.
  4. Add eggs, vanilla Greek yogurt and vanilla & blend until incorporated.
  5. In a separate large bowl sift together flours, salt and baking powder; whisk in chia seeds.
  6. Slowly add dry ingredients to wet and mix until just combined (do not over-
  7. mix and work quickly before the chia seeds absorb all the moisture).
  8. Fill muffin cups ⅔ of the way full and bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool for 10 minutes.
  10. Serve & enjoy.
  11. Allow any remainder to cool completely before storing in Ziploc bags or an airtight container. Yields 12 muffins.
