Dark Chocolate, Pistachio & Sea Salt Cookies Recipe

Ingredients
1 ½ cups of all purpose flour (I used Gold’s Unbleached All Purpose Flour)
½ tsp. sea salt + additional for sprinkling on top of cookies
¾ tsp. baking powder
½ tsp. baking soda
½ cup unsalted butter, at room temperature
¼ cup granulated white sugar
¾ cup light brown sugar
1 egg
1 tsp. pure vanilla extract
¾ cup no salt added pistachios, shells removed & lightly chopped
1 cup dark chocolate, chopped (I used Ghirardelli 60% Cacao Bittersweet Chocolate)
Instructions
Preheat oven to 350 degrees F.
Line a large cookie sheet with parchment paper, set aside.
In a small bowl whisk together flour, sea salt, baking powder and baking soda.
In a separate large bowl using an electric handheld mixer cream together butter and sugar until light and fluffy (approximately 2-3 minutes).
Add egg and vanilla extract and beat for an additional 2 minutes.
Slowly incorporate dry flour mixture into the wet ingredients and mix until just combined.
Gently fold in pistachios and chocolate chunks.
Scoop tablespoon sized portions, roll into balls and set 2 inches apart on prepared baking sheet; sprinkle lightly or liberally depending on preference with sea salt.
Bake for 10-12 minutes or until edges turn light brown on the edges. Allow cookies to sit on baking sheet for 2-3 minutes before removing to a wire rack to cool.
Serve & enjoy! Yields 2 dozen cookies.
