In a large pot bring 8 cups of water with 2 tsp. of salt to a boil.
Add rice, stir and return to boil and let cook uncovered for 10-12 minutes.
Once cooked strain and rinse rice in hot water (this prevents rice from continuing to cook further and from sticking together), shake as much water as possible from rice and transfer to a large bowl.
Stir in cilantro, lime juice, zest and remaining ½ tsp of salt.
