Prep 10 muffin cups with paper liners or nonstick cooking spray.
In a bowl combine flax, oats, milk, vanilla extract and bananas. Use a fork to gently mash the bananas and mix ingredients together. It should be thick but not tough to stir with the fork. If too thick slowly incorporate reserved milk to loosen it up.
In a separate bowl sift together the flour, baking powder, baking soda, cinnamon and salt.
In a small bowl whisk coconut oil, honey and molasses then add to oat mixture and mix well.
Add wet ingredients to the dry flour mix and stir until just combined.
Gently fold in chocolate chips.
Generously fill 10 muffin cups all the way to the top.
Fill empty muffin cups with water to ensure even baking.
Bake at 400 degrees F for 5 minutes. Reduce temperature to 350 degrees F and continue baking for 12-15 minutes or until toothpick inserted in center comes out clean. Watch carefully to prevent over baking since these muffins have a wonderful brown color from the whole wheat flour and molasses.
