Sweet Potato Mash Slow Cooker Recipe

  • 5 Cups chopped, peeled sweet potatoes or yams
  • 2 teaspoons fresh lemon juice
  • 2 Tablespoons unsalted soft butter
  • ¾ Cup packed brown sugar
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • Dash Nutmeg
  • Dash ground cloves
  • 1 large egg
  • ¼ cup sour cream
Instructions
  1. In a pot of boiling water, cook sweet potatoes for 15 minutes or until tender.
  2. Drain and transfer to a blender or food processor.
  3. Puree or mash sweet potatoes until smooth. Add lemon juice.
  4. In a bowl combine butter, brown sugar, spices, egg and sour cream. Beat until smooth.
  5. Fold in sweet potato puree.
  6. Transfer to a lightly buttered crock pot.
  7. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  8. The sweet potatoes will be slightly brown on the edges when done.
