I (Litsa) was browsing through Kroger‘s produce section and came across Organic Baby Kale packaged to bring home with a Manager’s Sticker for only $1.49—a deal! I’ve enjoy greens and although my freezer is full of greens from my mother-in-law’s garden, I didn’t have Baby Kale. Thus, it came home with me.
After another day of sitting in my refrigerator, I opened the box to find just a few pieces of baby kale that needed to be tossed. After cleaning up my bargain box of baby kale, I had a colander full. I kept one bowl for a pom-seed-kale salad that I’ll eat with olive oil and balsamic vinegar.
The rest of the baby kale was boiled down on the stove top until it was tender! I tossed in a bit of salt, pepper, olive oil, and sugar. It was only a half bowl full when it came out of the pot. After draining it well, I set it aside to cool. Then, I added a touch of basalmic vinegar to it. “Mmm…good,” said my 5.5 year old daughter as she reached for the bowl to eat it mid-morning (10:45 a.m.) as I finished this post.
Now, to enjoy a Kale salad and another trip to Kroger for baby kale or kale to make Kale chips! Have you tried them yet!?!
