Beet Greens

Did you know that the green leaves on beets are edible? Beet greens are packed with nutrients much like spinach or swiss chard. Beet greens contain a large amount of vitamins A and K, plus anti-oxidants Beta Carotene and Lutein. They are also full of potassium and folic acid. Beet greens have a higher nutrient content than the beet root! I juice beet greens all of the time right along with the beets!I hate it when the store has cut the greens off the beets!

Beet greens can also be sauteed just like spinach. Just wash the beet greens and add to a hot pan. The greens will reduce quickly like spinach as there is a high water content.

So the next time you buy beets, don’t discard those nutritious greens! If you have never had beets, make sure you try roasting beets! Roasting brings out the sweetness.
