Fig Cookies

A neighbor of ours has a ton of fig trees and last week he brought us a ton of fresh figs. I am the only one that will eat fresh figs so I decided I needed to incorporate them into a recipe. Fig cookies seemed like a good fall recipe to make!

I used pecans in my cookies but you could also use walnuts or omit the nuts entirely.

Ingredients
  • 1 Cup Granulated Sugar
  • ½ Cup Shortening
  • 1 Egg
  • 1 Cup All-purpose Flour
  • 1 Cup Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • ½ teaspoon Cinnamon
  • Dash of Nutmeg
  • 1 Cup Chopped Figs
  • ½ Cup Chopped Pecans
Instructions
  1. Preheat oven to 350 degrees.
  2. In a mixing bowl cream together the sugar, shortening and egg.
  3. In a separate bowl mix the flour, baking soda, baking powder and spices together.
  4. Add half the dry mixture to the creamed mixture. Once the mixture is combined add in the other half of the dry mixture. (The dough will be thick and it is best to use something like a KitchenAid mixer.)
  5. Fold in the figs and pecans.
  6. Place spoonfuls of dough on greased cookie sheet.
  7. Bake for 15 minutes.
