Freezing Almond Milk

Almond milk is usually not a staple in my refrigerator (Litsa’s). However, it was recently on sale at our local grocery store and I had a coupon for it. Thus, two cartons of Almond milk arrived home with us. My daughter enjoyed a cup or two full of it—–and I loved it in my wintery mix of smoothies. The Almond milk was filling and tasty in my smoothies. As I was telling my girlfriend about it, she noted that after opening Almond Milk, it needed to be discarded or frozen within 7-10 days. Sure enough, I found the little caution label on the carton:

With half a carton full, I wanted to make sure that my savings were truly savings on this new item that made its way into our refrigerator. I knew that I didn’t plan on using it within the time frame noted on the carton. Thus, I chose to use my ice cube trays to freeze the almond milk. I simply poured the almond milk into the ice cube trays and set it in my freezer to freeze into cubes. When the almond milk cubes were frozen solid, I emptied them into a Ziploc bag and labeled it accordingly. Now, I’m prepared for my next decadent smoothie without wasting my almond milk supply.
