Garbanzo Bean Summer Salad Recipe

Simple and easy summer salad recipe that will help you get your daily dose of healthy vegetables and protein without a lot of time or energy! Toss it together for a quick healthy snack, a perfect accompaniment to lunch or an easy side dish at dinner time!

Garbanzo Bean Summer Salad Recipe

Ingredients
  • (2) 15.5 oz cans of garbanzo beans (chickpeas), rinsed & drained
  • (1) medium-large cucumber, diced
  • (3) Roma tomatoes, diced (or substitute cherry tomatoes, halved)
  • ¼- ½ small onion, diced
  • ¼ cup balsamic vinegar
  • 2 tbsp olive oil
  • Salt & pepper (to taste)
Instructions
  1. In a large bowl combine beans, diced cucumber, diced tomato and diced onion.
  2. In small bowl combine balsamic vinegar, olive oil, salt and pepper, whisk together.
  3. Drizzle vinegar and oil mixture over vegetables and toss to coat.
  4. Chill for at least 30 minutes. Serve and enjoy!
Notes
* Add fresh chopped basil or cilantro for additional flavor and color! * Add crumbled feta or fresh mozzarella for additional flavor and texture!

  1. i had to change the amts a bit, only had one tomato, used one whole cuke, one can of chickpeas, added basil and a cup of blueberries. really fun!
