What are Garlic Scapes?

Garlic scape

Last fall I planted garlic in our vegetable garden. In spring the green leaves emerged and now the garlic scape is growing! A garlic scape is the curling stalk that emerges in the center of the leaves. Garlic scapes are edible and can be used in salads or sauteed. The longer the garlic scape grows the tougher the stalk gets. It is best to harvest garlic scapes when they are not too long – maybe after the first curl.

You do want to cut the garlic scape off even if you are not going to eat it. If you leave the garlic scape intact, the energy of the garlic plant will be diverted to the scape and not the bulb. The end result will be a smaller bulb of garlic. Cut the scapes so the energy will go to the garlic bulb!

Have you eaten garlic scapes before? This will be our first year eating them! I hear they are a delicacy
