There are many days that I crave a sweet snack. I am always looking for recipes that are easy to throw together, are healthy and ease my sweet tooth. This recipe is perfect for summer since the lemon and coconut remind me of the beach! The lemon is refreshing while the honey gives a nice sweet touch.

Using a ramekin for this recipe is a great way to ensure portion control. In general, a ramekin holds about a half cup. These lemon coconut ramekins would make a great afternoon snack or dessert. The chia seeds add protein and potassium plus they don’t change the flavor of the dish! Add this recipe to your post workout snack list!

Lemon Coconut Ramekins Recipe

Ingredients
  • 1 cup shredded coconut
  • ¼ cup almonds, coarsely chopped
  • 1½ tbsp honey
  • 1 tbsp coconut oil
  • 1 tsp. chia seeds
  • Zest and juice of ½ lemon
Instructions
  1. Combine all ingredients in a medium bowl and mix well.
  2. Divide ingredients among three ramekins.
  3. Serve immediately or try chilling the ramekins in the fridge!
Notes
You can use a food processor to blend the ingredients if you want a finer product. I liked the chunky almonds and coconut!
