The ingredients listed for this recipe is for a small single serving salad. The recipe can easily be doubled to meet your needs! If you like more spice, add some jalapeno!
- half a lemon juiced
- 3 strawberries diced/sliced
- one avocado diced
- 3-5 campari tomatoes
- 1 bag sweet corn (small package individual Bird's Eye/microwaveable sweet corn)
- ¼ cup diced sweet onion
- salt/pepper to taste
- chili powder to taste
- Combine all ingredients in a small bowl.
- Serve immediately or refrigerate.
